About the Department
The Department of Microbiology and Fermentation Technology undertakes Research and Development activity
in the area of food related biotechnological processes of industrial relevance to the country, with an
emphasis on efficient process development. Department has contributed significantly in the area of
bioactive metabolites, food additives, pre and probiotics, bacteriocins; peptide antibiotics, biopolymers,
microbial lipids and pigments, glycerol, organic acids, enzymes, enzyme inhibitors and other biomolecules of
industrial interest. The completed activities include processes for bacterial biodegradable polymer,
biopreservatives from lactic acid bacteria.
Department has carried out pioneering work in the area of solid state fermentation (SSF). Engineering investigations have been carried out on the interaction of mass and heat transfer with biochemical reaction for better design of SSF bioreactors and scale up. Processes for alpha amylase, pectinase, amyloglucosidase, rennet have been developed and have been transferred to industries. Studies have led to the identification of Caffeine demethylase for efficient bio decaffeination of tea and coffee. In house and externally funded Projects for the microbial production of amino acid and enzymes wines, miso, tempeh, cellulose degradation, diversity of lactic acid bacteria, antibiotic resistance in lactic acid bacteria, rapid detection of probiotic lactics and vinegar from malt extract have also been successfully completed.
The Department has the necessary infrastructure as well as research capabilities for basic Microbiological and fermentation studies and molecular biology research as well as optimization and modelling of microbial bioprocesses, design & fabrication of bioreactors, and downstream processing of biomolecules of industrial importance.
The Department provides hands on experience to students & professionals in Microbiology, Fermentation technology as well as molecular biology techniques by conducting short term courses, sponsored training programmes and also raise awareness imparting training in good manufacturing practices (GMP) relating to sanitation and hygiene.
